A few sample menu ideas from Chef Dennis' kitchen. By no means comprehensive, just enough to get you thinking...

Comfort Foods-                                      
  • 5 Cheese Mac & Cheese- nobody can resist  this classic with a twist, creamy in the middle with a crunchy crust on top; with green beans and plum tomatoes on the side
  • Chicken Pot Pie- lots of chicken, vegetables and herbs in a flavorful sauce and a  cobbler style crust
  • Beef Pot Roast- just like you remember only better; tender beef, vegetables and rich gravy
  • Shredded Chicken Enchiladas Verde- Mexican comfort food at its best; shredded chicken, tortillas, salsa verde and cotija cheese make this a dish you’ll want again and again
  • Slow Roasted Pork loin- Served with garlic and parmesan mashed yukon gold potatoes
  • Chicken and Andouillie Sausage Gumbo- Cooked long and slow with a deep dark roux to give it that special flavor; served traditionally with potato salad
  • Grilled Sausage & Vegetables- simple and rustic; choice of sausages served with grilled seasonal vegetables, potatoes and fresh herbs
Low-Fat
  • Chicken Marcel- boneless chicken breast, marinated in dijon mustard and rosemary then grilled to perfection; goes great on top of or along side Chef Dennis' Caesar salad
  • Seared Ahi Tuna- served over fresh salad greens with chile lime vinaigrette
  • East Indian Green Chicken Curry- this dish is bursting  with the heady flavors of cilantro, mint and ginger. Especially comforting with either saffron rice or dry potato curry
  • Panzanella Salad- Ripe tomatoes, bell peppers, cucumbers and olives combine with crusty french bread in a tangy vinaigrette

    Elegant-
    • Beef Bourguinon- my recipe is a classic with carrots, onions, bacon and a deep red wine sauce
    • Veal Picatta- tender veal with lemon, capers, white wine and parsley
    • Scallops Provencale- simple and always good; served with herbed basmati rice
    • Pan Roasted Filet Mignon with Roquefort Chive Sauce- with sautéed wild mushrooms
    • Crab Cakes with Lemon-Chile Remoulade- served on a bed of light greens with my tangy lemon remoulade sauce
    Chicken-
    • Chile Garlic Rubbed Chicken with Caper Chimichurri- boneless chicken breast, marinated in garlic, chiles and lemon. then grilled to perfection; goes great with lemon herb linguine or a Caesar salad
    • Crispy Oven Baked Chicken- served with parsley buttered red potatoes
    • Chicken Tagine- chicken slow-cooked in North African spices with olives and house-made preserved lemons
    • Thai Style Grilled Chicken- with sweet and sour dipping sauce and coconut rice
    • Chicken Picatta- boneless skinless chicken breast with a parmesan crust; topped with lemon caper butter sauce
    Beef-
    • Tri Tip with Avocado Sauce- grilled and roasted, topped with a cooling avocado sauce, you  are going to love this
    • Short Rib Beef Ragu- hearty and classic, full of deep rich flavors; served on homemade spaetzle
    • Beef Adobo Salpicao- modern Filipino food topped with crispy browned shallots and accompanied by garlicky jasmine rice
    • Marinated Flank Steak with Lemon- bright and flavorful, served with chile-roasted potatoes
    Pork & Lamb-
    • Cuban Style Pork Chops- marinated in citrus and spices, then stuffed and grilled; served with Cuban inspired black beans and rice
    • Roast Pork loin with Green Peppercorn sauce- slow roasted and juicy with a fennel-dijon crust and green peppercorn sauce
    • Honey Balsamic Lamb Chops- marinated in honey and balsamic vinegar; grilled to perfection
    • Lamb Shish Kebab with Lemon Olive Cous Cous- Middle-eastern flavors combine to make this dish big and bold
    Seafood-
    • Chipotle Shrimp- smoky, garlicky, and spicy...perfect
    • Chile rubbed Swordfish with Cilantro Lime Crema- with chipotle smashed sweet potatoes
    • Pan Seared Sea Scallops with Green Curry and Mango Papaya Salsa- spicy, fruity and exotic
    • Indian Style Halibut- cool and spicy this hits the spot, served with house-made flat bread and curry lentils
    Vegetarian-
    • Eggplant Stew with Tomatoes, Peppers, and Chickpeas- full flavored dish paired with pine nut and currant bulgur pilaf
    •  Mushroom Ragu- lots of mushrooms, tomatoes and herbs on creamy polenta
    • Vegetarian Summer Stew- served over herb butter egg noodles
    • Spicy Potato, Tomato and Pepper Tagine- inspired by a Moroccan tagine, this is full of flavor and aromas
    Legumes, Grains and Pasta-
    • Baked Ziti with Italian Sausage- the name says it all...marinara, mozzarella & Italian sausage
    • Risotto w/ Prosciutto & Fresh Peas- Italian dry-cured ham, sweet peas, tangy parmesan cheese and extra virgin olive oil  make this dish something special
    • Corn Cakes topped with Bacon and Goat Cheese- for a lighter meal try this paired with Chef Dennis’ Caesar Salad; made with homemade dressing, and garlic croûtons
    • Red Beans and Rice- good, old fashioned and filling. Comes with Chef Dennis’ famous cornbread and honey-butter
    • Roasted Vegetable Lasagna- pasta layered with roasted vegetables, ricotta, tomato sauce and mozzarella
    • Penne with Sausage, Artichokes, and Sun-Dried Tomatoes- simple yet satisfying
    Soups-
    • Chicken Tortilla Soup- shredded chicken, chiles, cumin and cilantro give this soup its' authentic flavor
    • Butternut Squash Soup with Peppers and fresh Lime- simple yet satisfying, with lime and cilantro
    • Potato Cheese Soup with Green Chiles and Smoked Sausage- this winter soup will warm you from the belly up
    • Chef Dennis' Award Winning Chili- made the old fashioned way; no beans here- just beef and chiles- served with sour cream cornbread
    • Creamy Clam Chowder- full of clams, potatoes, bacon; finished with a touch of cream
    • Golden Beet and Beet Greens Soup- using the beet to it’s fullest, with slices of golden beets and dark leafy greens
